Moxie Kitchen + Cocktails showcases Chef Tom Gray’s personal take on contemporary regional American cuisine, influenced by his southern upbringing, extensive travels, and passion for working with artisan producers and local growers.
Expertise + Expert Taste
Two “Best Chef: South James Beard Award” nominations (2009 + 2010) haven’t tempted Chef Tom to rest on his laurels - if anything, they’ve inspired him to seek new challenges outside of his comfort zone. Along with his wife and business partner, Sarah Marie Johnston, they bring the flavor of Jacksonville to the popular St. Johns Town Center shopping and dining center.
With the addition of their second restaurant in 2017, Town Hall located in historic San Marco, and a dedicated team of front- and back-of-the-house professionals and savvy business partners, Chef Tom and Sarah Marie are leading the charge to bring a higher level of recognition to the North Florida dining scene and sustainable sourcing movement.
Serving American flavors from coast to coast, Moxie Kitchen + Cocktails is the only locally-owned restaurant built from the ground-up at the Town Center and stands out with carefully-sourced ingredients, bold design, professional service, and a “full circle sustainable approach” to sourcing and business.

Sourcing + Sustainability
As a locally owned and operated restaurant, Moxie Kitchen + Cocktails takes a “full-circle approach” to sustainability. We source from and work with local and artisan producers every day. Recycling and eco-friendly practices form the core of our business philosophy because we wholeheartedly believe it’s the right thing to do.
Decor + Details
Many of the building materials used in the construction of the restaurant use a high percentage of recycled or reclaimed content (like steel and wood), are high-performing and energy efficient (variant speed hood system, Energy-Star kitchen equipment, in-house water filtration system for bottling still and sparkling waters, LED light fixtures in service areas, Dyson air hand dryers, etc.) or help reduce our footprint (cardboard compactor, recycling program, eco-friendly to-go paper goods, etc.).
